Instant Dates & Oats Kheer

The Holy Bibble Calls Dates as the "Tree of Life" & the Holy Quran says "It's the blessing from Paradise". Even if one is not looking at the health benefits, dates taste so yummmm & delicious that one cant refrain from consuming it.
Khajur aur Oarts ki Kheer

Since childhood I have seen Muslim families using dates extravagantly during the month of Ramazan. Infact they break their fast with this fruit. And I must admit the ripe, soft & juicy dates is something to die for.

So making a healthy tasty dish using dates (khajur) was my agenda. And as a lazy bum I didnt want to spend much time doing so. In my quest of an Instant tasty Dates food I stumbled upon this Dates - Oats Kheer.

So for the ones fasting & the even the ones who aren't I am here with a creamy, Sweet, healthy Kheer.


Ingredients of Making Kaju Oats Kheer:


1. Oats - 4 tbsp
2. Dates, ripe - 10 - 15
3. Almonds - 6
4. Milk - 4 cups
5. Nuts, chopped - To Garnish

Method of Making Kaju Oats Kheer:



1. Take a pan & dry roast oats till a nice nutty aroma comes.Keep aside
2. Chop the almonds roughly. Don't grind into fine powder.
3. Take 4 Almonds & make a paste by grinding.
4. Take the remaining 2 dates & finely chop them.
5. Boil the Milk in a thick bottomed pan. After a boil heat on low flame till milk reduces to half the quantity.
6. Grind the roasted oats.
7. Mix the chopped almonds, oats powder & Dates paste & blend to achieve a creamy consistency. your kheer is ready.
8. Refrigerate the kheer for about 20 - 30 mins.
9. Garnish with chopped dates & Nuts.

Chocolate Walnut Mousse Recipe


A quick & easy way of serving sweet love, Chocolate Walnut Mousse.

How to make Chocolate-Walnut-Mousse


Ingredients for Walnut Chocolate Mousse:

1. Bittersweet Chocolate - 400 grams
2. Unsalted butter/margarine - 1 tbsp
3. Milk - 1/2 cup
4. Walnuts, crushed - 1/4 cup
5. Heavy cream - 1 Cup
6. Powdered Sugar - 1 tbsp


Method of Making Chocolate Walnut Mousse:



1. Take the chocolate & butter in the top of a double boiler on low heat.
2. Melt the chocolate stirring constantly.
3. Remove from heat, and gradually stir the milk (not too hot), beating well.
4. Allow to cool for about 10 mins.
5. Using electric beaters, beat the cream until stiff.
6. Stir the walnuts into the chocolate, and gently fold this.
7. Pour the mousse into molds or a serving dish & refrigerate overnight or atleast 3 hours before serving.
8. Garnish with Cream & Cherry Flower.

Sitaphal Pudding Recipe


As a kid I used to bid good bye to my fav mango season & welcome sitaphal. Like me a lot of people are fond of these two fruits.

Sitaphal has a typical buttery, delicate flavour that often made me think why not make an icecream or pudding with it.

And then one fine day I came across this Sitaphal pudding... Trust me you will be lost in its taste.


Ingredients Sitaphal Pudding Recipe:
Custard Apple Recipe


1. Sitaphal (custard apple) pulp - 1 1/2 cup
2. China grass - 1 packet
3. Water - 1 cup
4. Cream cheese - 500 grams
5. Powdered sugar - 3/4 cup
6. Fresh cream - 1 cup
7. Almond - Finely chopped, to garnish
8. Pistachios - Finely chopped, to garnish
9. Walnuts - Finely chopped, to garnish

Method of Making Sitaphal Pudding Recipe:

1. Cut china grass into small pieces.
2. Boil water in a vessel & allow china grass to dissolve in it over low heat.
3. Continue stirring till dissolves completely. Allow to cool.
4. In another large bowl, place the cream cheese, china grass & powdered sugar; and beat with an electric blender till smooth.
5. Fold in the fresh cream & sitaphal (Pudding Recipe) pulp.
6. Blend again.
7. Pour the entire mixture into pudding cups & set in refrigerator.
8. Garnish & serve chilled.

Suji Ka Halwa Recipe


Semolina Desert Recipe
I was asked for this recipe by a dear friend on Facebook & then I realized how could I miss out on the very very famous Suji ka halwa. A lot of childhood memories are associated with it :) So here is how we make Semolina Halwa or Suji Ka halwa.

Ingredients  for Making Suji Ka Halwa


Ingredients Quantity
Semolina (Sooji/ Rawa) 3  cups 
Clarified Butter (Ghee) 1 cup 
Cashews Nuts (Kaju) Handful
Whole raisins (sultanas/Kishmish) Handful
Hot water 5 cups 
Whole/ full cream milk 2 cup 
Sugar 1 cup 
Green cardamom (Elaichi) 5 pods
Saffron (Kesar) A few

Method of Making Suji Ka Halwa 


1. Take another deep bottomed pan & put it on stove at medium flame. Boil Milk with water. Add Cardamons & saffron to this & let the sugar get dissolved. Stir at regular Intervals. 

2. Take a thick bottom pan (Kadhai) & put it on the stove at medium flame. When the pan become hot add ghee (Clarified Butter).

3. When the butter melts, add Semolina  (Sooji) to it & saute/roast on low flame.Stir constantly using spatula till  Semolina (Suji) turns golden brown & give off a faint aroma. When roasting Semolina  make sure you don't leave it unattended as this may burn it.
Suji Halwa Recipe

4. When the Semolina (suji) is properly roasted,slowly add the boiled milk & water syrup. Keep stirring persistently even when you are adding boiled milk & water syrup to avoid any lumps.

5. If any lumps are formed, make sure to break them with the back of the stirring spoon so you get a smooth paste-like consistency. As much as possible one should try to ensure no lumps are formed.

6. Add cashews and raisins to the Sooji / Semolina  and mix well.

7. Cook on low flame till the mixture leave the sides of the pan.

8. Lets do the plating & serve with love.

Gajar ka Hawal Recipe

Gajar ka halwa is one desert known for its royalty..

Ingridients

Gajar ka halwa - carrot pudding, gajar sweet
1. Carrot ( Grated ) - 500 grams
2. Sugar - 350 grams
3. Milk - 1/2 ltr
4. Ghee - 5 tablespoon
5. Cardamon - 5-7 6. Cashew nut - to garnish
7. Almond - to garnish
8. Raisons - to garnish
9. Chandi ka warq - to garnish
10. Khoa - 150 grams

Method of making Gajar ka Halwa:

1. Boil milk with cardamons.
2. Add grated carrots to it & cook till milk reduces to half. Let the milk get absorbed fully.
3. Lower the flame & add sugar. Mix well till sugar gets disolved.
4. To this add khoa & ghee & mix.

5. Stir on low flame, be carefully not to keep it slightly in liquid state as we are making Halwa & not barfi.
6. Decorate with almonds, raisans, & Chandi ka warq.

Phirni Recipe

Ingredients for making Phirni:

1. Rava - 200 grams
2. Milk - 1/2 ltr
3. Sugar - 500 grams
4. Cardamon Powder - 1 teaspoon
5. Nuts - 1 cup
6. Khova - 1/2 cup

Method of making phirni:

1. Soak rava in water for 15 mins.
2. Boil Milk
3.Now drain the water & keep aside
4. Add soaked rava to milk & boil
5. Stir constantly to avoid lumps.
6. Keep stirring & add sugar
7. Add safron & khova
8. Garnish with nuts & serve hot or cold.
